ScandiFoodie's Creamy Salmon Soup
ScandiFoodie is all about bringing a touch of Scandinavian influence to an Australian lifestyle. A self proclaimed Scandinavian design advocate living in Sydney, Maria Laitinen is great at a lot of things she showcases on her site, including styling and photography, but one thing that has Wolf hooked is her delicious Northern recipes.
Creamy Salmon Soup
1 litre of water
1/2 teaspoon (or to taste) salt
1 onion, finely chopped
3 carrots, peeled and sliced
6-7 potatoes, peeled and cut to chunks
500g salmon, skinned and boned, cubed
whole bunch of dill, finely chopped
1. Add water, peppercorns, salt and onion to a large casserole. Bring to boil and simmer for 5 minutes.
2. Add carrots and potatoes and simmer for about 10 minutes or until the potatoes are half-cooked.
3. Add salmon and cream and simmer on low heat for a further 10-15 minutes or until the fish has cooked through. Add dill and serve.

What is your favourite ingredient to use at the moment?
It is winter here in Australia so I'm really loving all the winter veggies at the moment!
In your opinion what is the most underrated ingredient?
I think sometimes we forget to appreciate the simplest ingredients that can be absolutely amazing when cooked right, Brussels sprouts is a great example!
What ingredient do you have the hardest time finding?
Here in Australia it is often challenging to find ingredients that I would use for Finnish recipes. Thankfully ingredients like rye flour are becoming more widely available. One ingredient that is still hard to find is quark! I absolutely love it, but I can't get the same kind they have in Finland.
What is your first memory of Nordic food?
Oh gosh, that's a tricky one! My earliest memory is probably from when I was a few years old and I was picking blueberries in a forest. Mum used the berries to make a traditional Finnish blueberry pie!
What is your favourite dish on your current menu?
The humble lentil! I am obsessed with lentil stews, warm salads and soups in winter!
